It is important to make a distinction between deer-resistant and deer-proof plants:
Deer-resistant plants are those that may be nibbled (but not completely eaten), tasted once (not regularly) or eaten during its off season. Resistance deals with how much browsing or damage your garden can stand.
Deer-proof plants are defined as plants deer absolutely, positively will not eat under any circumstances. Unfortunately, as mentioned above, deer that are hungry enough may sample and eat anything, so the best things is to limit the possibilities and try to plant things other gardeners have had good luck with.
